SCONES
8 ounces SR flour
1 tsp baking powder
2 ounces margarine or butter
1 ounce caster sugar
1 egg beaten lightly and made up to 5 fl oz with milk
Sieve the flour and baking powder, rub in the fat, stir in the sugar.
Pour the egg and milk to form a soft dough.
Save a little of the egg and milk to brush the top of each scone before baking.
Bake at about 180 degrees for 10 to 15 minutes o until golden brown.
Cool between a clean folded tea towel on a wire cooling tray. Wholemeal flour can be used instead of white.
